 Amaranth with ripe banana, date, and almond milk
One of the perks of blogging is the time difference that exists between coasts
I woke up this morning, 
saw Sasha's breakfast and was inspired to make something similar...
Next time I make this I am going to mash the banana more (like Sasha) 
 Lunch was leftover borscht 
+  arugula/raddichio/hazelnut/goat cheese salad from our community garden 
Yum

haha i saw the photo before i read what you wrote + thought, wow! we're on the same page, looks like what i ate:))) amaranth is so good, have you made it savory before? like with fish... i like it like that too:)))

yeah, it cooks pretty quickly which is sometimes nice in the morning! has the fluffiness of cous cous, but it's a grain..

yes, i usually always have it savory, even in the morning. today's breakfast was actually a stretch because it wasn't! but very good
