Friday

Miles surprised me with this delicious dinner after work:
green pancakes (chard, scallion, cilantro with folded egg whites so they were super fluffy and light)
herb salad
leftover lamb stock soup

hi coco! yes, i think we have common taste, those avocado noodles you made looked delicious!

here is the recipe for the green pancakes:

chard, scallion, cilantro, chile, 3/4 cup wheat flour, whole egg, egg white, 2/3 cup cream, 1 tbsp baking powder, 4 tbsp melted butter, salt, cumin

-separate chard stems from leaves, sautee stems first, then wilt leaves, squeeze excess water with hands, roughly chop, set aside

-put flour, baking powder, whole egg, melted butter, salt, cumin, and cream in bowl and whisk until smooth, add one bunch chopped scallion, chopped chard, cilantro, and minced chile. Whisk egg white until peaks, gently fold in the batter

-fry batter 2 minutes on each side, transfer onto dish towel
