I just made this salad for lunch today and I swear of all the salads I have ever made, this one is my favorite. Maybe just because I was craving it, I am not sure. But it took 3 minutes to make.
Baby spinach
Left over collard greens from two nights ago
Spicy sopressata from Salumi
Shaved parmesan
Squeezed lemon
Regina olive oil
Salt/pepper
