Have been working on making easy lunches to take to work with me.
This one is barley, tofu, sprouted lentils, daikon, blanched greens, and homemade kimchi with tamari.
I usually make it the morning so I don't have that much time, but this is easy if you have the barley already cooked.
What do you take to work?

i usually have big breakfast and i avoid heavy lunches as they make me sleepy. i make big leafy salads with sundried tomatoes,feta cheese and olive oil, pasta with homemade pesto, sweedish bread with roasted peppers, haloumi and oregano. and a big pot of herbal tea to wash down.

My fave lunch to bring lately, also ez + quick to make in the morn. Greens w/cucumber, green onions, cilantro, olives (sometimes), somethin filling - avo or boiled egg, somethin crunchy - walnuts or croutons w/simple dressing - tahini, lemon or lime or acv, s+p, + maybe some paprika, harissa :]

Awesome! Lately, it has been roasted vegetables and a grain (barley, farro, brown rice, etc...)

I've never ventured into sprouting, although I'd like to. How do you do it?

This looks very good. I almost always eat out for lunch at work, as I only work in the office one day a week and we have lots of very good, inexpensive cafes near my office.

Quinoa cooked with raisins, a little cumin, olive oil, blanched veggies and half and avocado...sliced oranges. super yum!

Ah! I've been trying to be better about this too. I have spinach ravioli and cut fruit for tomorrow, but looking for some good healthy easy packs. Love your pre cooked grains idea. Looks delicious

belinda, you just soak lentils over night and then drain, leave in a sunny spot and rinse them every day!

This lunch is what all my take-to-work lunches aspire to be! I'm always rushing out the door in the mornings, so I pack my lunch the night before. It usually consists of a random mishmash of leftovers. It's pretty sad, actually. :)

i either stop at mc donalds or denny, if i feel like going gourmet In and out never disappoints. the sutle flavour of there patties really come out when you animal style
