Monday

Sunday brunch.
I think we are kind of excessive with our use of poached eggs... It's probably really unhealthy actually :/
But so good on anything!

haha, well it's just that we eat poached eggs like almost every day! don't eggs make you have high cholesterol? i don't know, and clearly don't care... lol

How do you make such perfect poached eggs? I have given up after 4 failed attempts :) By the way, I've been making Socca after being inspired from your posts. So easy and tasty!

haha, i just asked miles (my boyfriend) how he makes them so perfect and he says "make them twice a day everyday." (Just goes to show you what I mean when I say it may be a bit unhealthy!)

But really how he does it is in a shallow, stainless steel pan, which he fills almost to the top with heavily salted water, gently cracks eggs in, waits until they're cloudy looking, and then takes them out with a slotted spoon and puts them on a cotton dishtowel (I think this is a good trick because it absorbs extra water).

Happy to hear you made socca! It's a great alternative to using reg. flour and I also love that it's savory pancake and can be eaten for supper.

they don't make you have high cholesterol ashley!!! i could go on about this for a longggg time (and have to natasha!). i've read a lot about it, it's a myth/ misunderstanding of cholesterol + the role of cholesterol in the body. you can + should eat eggs everyday. whole eggs, never take away the yolk and just eat whites (yuck, unless it's for baking or something). egg white omelette orders always make me so upset at the restaurant where i work, i want to go into a long explanation but have to stop myself + just save it for a few people. like you:))) eat eggseggseggs!

I agree with Sasha... my relatives always freak about the eggs we serve daily when they visit, like they will die of a heart attack by the time they leave, but high quality eggs (especially yolks) are the perfect food.

I am also obsessed with poached eggs! Just wanted to say to the Mei (asking how to make them) a really good trick is breaking them into a small bowl or ramekin first and then gently slipping them into the water, as opposed to cracking them right into the pot (which leaves more room for error- such as the yolk breaking!).
