Inspired by these beautiful duck eggs I got at the Sunday market, which I was told are great for noodles and baking, I decided to try making my very own noodles. I had read a few recipes and to my surprise noticed that it called for all the same ingredients as SpƤtzle dough only more flour was added so that it wasn't as sticky. So I tried it! And viola! Delicious noodles! I obviously need to get better at rolling the dough thinner, but honestly it tasted just fine :)

HOMEMADE NOODLES WITH GOAT MEATBALLS AND BROCCOLI RABE

For noodles:
two duck eggs
heaping spoonful of full fat greek yogurt
two ladels flour (plus more to keep it from sticking to board)
salt
______
mix, roll out, fold dough in half and slice lengthwise, boil, drain, toss with good olive oil

in separate pan, sautee garlic, mushrooms, goat meatballs, and broccoli rabe, serve!

jennifer! the goat comes from this man at the farmer's market (same place where we got duck eggs), his meat is amazing... the goat sausages are flavored perfectly, i just squeezed it out of its casing to make the meatballs
